Tomato Fruit Composition - Lipids

The involvement of lipids in the tomato fruit composition depends on the variety, the fruit maturity at harvest and the tomato treatments during storage.

The lipids involved in the tomato fruit composition reach about 33 and are diglycerides, triglycerides, sterols, sterol esters, free fatty acids and hydrocarbons.

Of these, LinoMc, linolenic, oleic, stearic, palmitic and myristic acids comprised the major portion in the lipid fraction of tomato pericarp.

The unsaponifiable fraction of the pericarp contains hydrocarbons with α-amyrin and τ3 amyrin, while the alkaline soluble fraction contains long chain organic acids.

Intermezzo: Special Quality Characteristics of Tomato - Alkaloids

Tomato, as a solanaceous plant, contains alkaloids. Alkaloids are naturally active nitrogen poisonous, bitter taste.

Swallowing of these from humans and animals to a certain limit leads to artificial paradise (or hell), accompanied by headaches, vomiting, convulsions and other equally interesting reactions. Above this limit, swallowing leads people and animals to the original paradise  – well known from other narratives.

The involvement of alkaloids in tomato fruit composition was the reason why it was initially demonized. The history of the inclusion of the tomato fruit in the diet of modern man, and therefore of its cultivation, is of great interest, but this fact will be a key topic of another tomato tribute.

Tomato Alkaloids - Steroids

Tomatine and solanine alkaloids are involvement in the tomato fruit composition. Tomatine is a a glycosidic steroidal alkaloid, whose green tomato content is about 0.087%.

Red and ripe tomatoes lose almost all of the tomatine when they stay on the plants for two to three days before harvest.

The same is true for solanine. Its presence decreases as the tomato changes color, while maturing completely disappears. Canned green tomatoes contain solanine, but thanks to the action of brine, its toxicity is completely neutralized.

In addition to alkaloids, stigmasterol and β-sitosterol are the two main sterols involved in the tomato fruit composition.

But composition without composers has absolutely no meaning. Rock band “The Seeds”
have been composers of very interesting canticles. So “The Seeds” in the composition and “The Seeds” in the performance offer to the audience of the two hemispheres the once popular song ‘Pushin ‘Too Hard’ – my little green tomato.
